Ingredients per 4 persones: 3 pastanagues, tres patates, tres carxofes, tres dents d&#8217;all, una ceba, un tom\u00e0quet madur. Al mercat hem demanat carn de vedella per fer estofat, tallada a quadrets, uns 450 grams. Es fregeix a foc moderat la ceba directament en l&#8217;olla expr\u00e9s, es tira dins l&#8217;all picat i el tom\u00e0quet rallat, quan est\u00e0 la ceba dorada posem la carn i una patata tallada a pessics petits. Quan la patata t\u00e9 una mica de color daurat tirem dins la pastanaga tallada a monedes, la resta de patata trossellada, i els cors de les carxofes. Afegim sal i una fulla de llorer, es pot tirar com a condiment una punta de xori\u00e7o o de botifarra tipus &#8220;morcilla de Burgos&#8221;. Es cobreix amb aigua i s&#8217;ajusta l&#8217;olla amb la tapa.
